This dish is one of my go-to meals whenever I’m crunched for ideas or time. I literally made this in 20 minutes before heading out to swim class.
I always have frozen shrimp in my freezer and the best part is that it thaws in minutes. As its thawing, I halve a pint of grape tomatoes. I like to pull the tails off the shrimp before seasoning them. Having the tails removed just makes it easier when it comes time to eating.
Season your shrimp with a few natural ingredients and grill those puppies up! The trick is to cook everything in this dish on the same pan without cleaning it. Which means you need to watch the heat. If you cook with the heat too high, you’ll get burnt crisps of shrimp on the pan and the rest of the ingredients will have that burnt taste.
If you see that the pan is drying out, add a little water, rather than rinse all the flavor off the pan.
This dish work on a grill pan or an iron skillet. I’ve also done it with whole corn kernels and then shaved the corn off manually but tonight, I didn’t have whole kernels. I only had frozen corn on hand and it came in very handy 🙂
Now, the best part of this dish is the dressing. I will drive to Trader Joe’s just for this dressing. It’s their Cilantro Salad Dressing found in the refrigerated produce section near the salads. I will not eat this meal without that dressing. It’s so incredibly delicious!
I serve it over brown rice or salad. Tastes great either way!
