I love colorful dishes and even more-so when you can cook the entire meal on one pan! This one pan chicken and veggies dish was ready in just 30 minutes in the oven!
The prep work is what takes the longest but even that is quick. I like to cube my chicken on the smaller side so that it cooks faster. If you leave the chicken too thick, the veggies will roast before the chicken is fully cooked.
You can basically do this with whatever veggies you have on hand and use the same seasonings.
Again, all natural ingredients! Serve alone or over couscous.
