My favorite food is italian…more specifically, pasta! And although this dish didn’t have any pasta in it, it was just as delicious! Zucchini is also my favorite vegetable. You really just can’t go wrong!
Now, I must admit, this dish was a bit more time consuming than I’d like to take on on a weeknight, however, it’s still very easy. Anyone can make this. It just requires a few extra steps that I normally care for mid week. Next time, I’d likely save this for the weekend.
Zucchini has a ton of water so one of the critical steps I read about is trying to drain the zucchini strips of most of it’s water. One way to do that is to grill it on a grill pan or outdoor grill. After manually slicing the zucchini, I grilled them on my grill pan and then placed them on paper towel to remove any excess water.
While that’s grilling you can make your sauce which by the way, is so delicious, I plan on making my marinara this way every single time for all my pasta dishes.
While I had my sauce going, I made the cheese mixture which is super simple. It’s a mixture of 3 cheeses and an egg.
Once you’ve got these two steps done, the hard work is pretty much over. Now you just layer your ingredients and bake it a bit and broil it at the end to get the cheese nice and bubbly!
